Strawberry Ice-Cream

Ingredients

300ml pure cream

2 egg yolks

1 tsp vanilla extract

4 tsp honey

2 tsp granulated sweetener

1/2 cup strawberries

Optional

For chocolate shell version, see Choc Froyo

Directions (No Ice-cream maker)

Step 1: Prepare ice-cream sticks in molds.
Step 2: Cut strawberries and heat in pan on low until soft
Step 3: Take off heat and mash with fork or potato masher 
Step 4: In a bowel, combine pure cream, egg yolks, vanilla, honey and stevia with an electric beater until it thickens
Step 5: Stir in the strawberries and cover.
Step 6: Freeze for 2 hours and stir to combine the liquid and solid components. Freeze for another hour and repeat.
Step 7: After mixing for a second time, pour into the molds. Set in freezer for 2 hours. Enjoy!

About the Recipe

My dad does not have a sweet tooth, and yet these ice-creams had him say "My new favorite food". He loves the crunch factor, so his favorite includes the chocolate shell with cocoa nibs.
