Choc Froyo + Choc Shell

Ingredients
1/2 cup Greek Yogurt
2 tbsp cocoa powder
1 tbsp granulated sweetener
1 tsp cinnamon
Dash of salt
Choc Shell:
60g chocolate
2 tbsp coconut oil
Optional
1 scoop choc protein powder (20g)
Cocoa nibs or crushed roasted almonds - for choc shell crunch
Directions
Step 1: Prepare ice cream sticks in molds.
Step 2: Melt chocolate for shell - choose method
Double Boiler Method (Bain-Marie): Boil water on stovetop with a glass bowel set atop.
Add 45g of choc and a tsp of coconut oil, stirring continuously (otherwise it will burn) for about 5 mins until runny.
Microwave Method: Add 45g of choc and a tsp of coconut oil to a microwave safe bowel and melt in 30 second increments, stirring each time (otherwise it will burn) until runny.
Step 3: Use a spoon to pour into molds, then tilt mold to coat all edges. This might be messy...
Optional crunch - sprinkle cocoa nibs or crushed almonds. Freeze for 1 hr.
Step 4: Combine froyo ingredients together in a bowel. Pour atop the frozen chocolate layer in the molds equally, allowing a slim gap between the top for the choc layer later. Freeze for minimum of 4 hrs.
Step 5: Melt 15g choc and 1 tsp coconut oil using one of the methods above.
Step 6: Pour over frozen yogurt one at a time, quickly spreading across with a spatula as it freezes immediately. Sprinkle with toppings if desired.
Step 7: Freeze top layer for 30 mins to firm up properly before enjoying!

Store with the molds rubber film across the top to prevent crystallization.

You can completely ignore the chocolate shell if you don't have enough time!

I have not tried the dipping in chocolate method yet as I don't believe it would stick well, but do let me know!
About the Recipe
This recipe began as a chocolate mouse base and granola bowels, then I wandered how well it would freeze... turned out to be a great ice-cream! Took it further with the chocolate shell for the crunch factor.
