Midnight Chocolate Cake

Ingredients

Wet​:
2 eggs
1/2 cup Greek yogurt
1/4 cup espresso
1/4 cup maple syrup or honey

Dry:
1/4 cup rice flour
2/3 cup gluten free flour
2 tbsp coconut sugar or brown monk fruit sweetener
1/4 cup cocoa powder
1 tbsp stevia
1 tsp baking powder

Optional:

1 scoop (1/4 cup) choc protein powder - replace with 1/4 cup gluten free flour

Icing:

1/3 cup Greek yogurt
1/4 cup cocoa powder 
2 tbsp honey/maple syrup
1 tbsp granulated sweetener (stevia)
 

Directions

Step 1: Preheat oven to 170c and line a cake tin with baking paper

 

Step 2:Combine wet ingredients in one bowel

Step 3: In a separate bowel, whisk together dry ingredients 

Step 4: Stir dry mix into wet

Step 5: Bake for 40 minutes - a skewer should come out clean. Meanwhile make the icing.

 

Step 6:Wisk together icing ingredients in a bowl and chill in fridge

Step 7: Let cake sit in tin for ten minutes before removing 

Step 8: Cover in icing and serve immediately, but best to chill overnight for firm icing

Notes

  • If you want cupcakes, bake for only 20 minutes until a skewer comes out clean
