Bacon Egg Rolls

Ingredients
4 pieces rice paper
5 eggs
1 cup shredded cheddar cheese
2 bacon rashes
Olive oil spray
Sesame seeds/bagel seasoning
Salt
Directions
Step 1: Preheat oven to 200c and prepare tray with baking paper.
Step 2: For crispy bacon, first chop into pieces and cook in oil
Step 3: Scramble 4 eggs
Step 4: Prepare eggs, bacon and cheese in separate bowls. Prepare a lightly oiled surface and whisk an egg in a low bowl or plate with a lip.
Step 5: One at a time, dip the rice paper piece in the egg and fill with cheese, bacon and egg. Sprinkle with salt and roll up like a spring roll. Place on tray. Repeat with remaining rice paper peices.
Step 6: If any egg left, use pastry brush to apply. Sprinkle with sesame seeds.
Step 7: Cook for 20 minutes until golden brown and crispy. Enjoy!
Notes

The longer the rice paper rolls are moist, the less crispy they get. Don't drown them in the egg wash!
